THE WINE CELLAR

Our cellar is located inside Montefiore dell’Aso territory, a belt traditionally devoted to grape growing and wine production.
It has been built by digging into a hill so as to secure a uniform temperature for a best preservation of wine, according to ancient use.
The two floors building has on the first floor the receipt of gathering and the grapes pressing department, while on the ground floor there are the wine-making and the ageing departments.
The ageing department is on the back side of the cellar, underground inside the hill. That’s why here inside the temperature and the dampness of air are uniform, ideal conditions for the storage of wine.
The cellar is placed in the centre of the farm. This permits to process the grapes as soon as possible so as to obtain an extremely high quality product.
In our farm we make wine exclusively from our own organically grown grapes. The vine-growing takes 15 hectares of the estate: a third of it is 15-20 yaers old , while the rest of it was planted in the last 5 years.
The sorts we grow are: SANGIOVESE, MONTEPULCIANO, PASSERINA, PECORINO, TREBBIANO, ALICANTE, CHARDONNAY and SYRAH.
The southerly, south westly exposure , the ground totally under grass and the low yield per hectare ensure a very high quality wine.
